Creamy Tahini Dressing + Another Quinoa Bowl

I really can’t get enough of my quinoa bowls!!


To keep them tasting fresh I have been making homemade dressings to drizzle over top.


The last dressing I made, peanut sauce (recipe posted on, was my favorite until the other day when I had this simple and delicious creamy tahini dressing!  I had it on my quinoa bowl and then again on my simple green salad the next night.  The flavor just got better with time (:


Creamy Tahini Dressing

Serves 4

2 tablespoons tahini

1 garlic clove, minced

4 tablespoons walnut oil (or any oil you prefer)

2 tablespoons apple cider vinegar

2 tablespoons water

2 teaspoons agave

1 tablespoon nutritional yeast

Salt and Fresh ground black pepper


Put all ingredients in to a jar with a tight fitting lid and shake away!  This is some great exercise (:

Alternately, puree the ingredients in a food processor.

Store in the refrigerator in an airtight container up to 3 days.


To make the Quinoa Bowl:

1/2 block tempeh, chopped small

1 garlic clove, diced

1 small shallot, diced

1 tablespoon coconut oil (or any oil you prefer)

1 1/2 cups cooked quinoa

2 large leaves kale, chopped well

1/2 large carrot, diced

1/2 red bell pepper, diced

Salt and fresh ground black pepper, to taste

1 avocado, peeled, cored, and diced

2 teaspoons nutritional yeast, optional

4 tablespoons sesame sticks, optional

In a large sauté pan, heat the coconut oil; add in the shallot and tempeh and cook until lightly browned.  Add the vegetables (kale, carrot, and red bell pepper) and cooked quinoa, stir well then add salt and pepper to taste.  Cook until the vegetables are just slightly softened.


Divide everything evenly between two bowls, top with avocado, nutritional yeast (if using), sesame sticks (if using), and creamy tahini dressing.  Enjoy!


Berry Chocolate Smoothie Cups

Now that I have my glorious VitaMix back in my presence I have been going smoothie crazy :D

This month for The Recipe Redux, a great blogging group I am a member of (MORE INFO HERE), our assigned topic was “Raising the Bar on Food in a Jar.”  I absolutely love this theme!!  I try and use as little plastic as possible in my everyday life so mason jars are my go-to!!  For my post today I made one of my favorite time-saving recipes: Smoothie in a Jar 


Smoothie in a Jar

Serves 1-2

For each mason jar (make as many as you’d like for the week):

2/3 cups greens

2 tablespoons raw almonds

2 tablespoons hemp protein powder, vanilla

For the smoothie (when you are ready to make it):

2/3 cups frozen mixed berries

1 cup chocolate almond milk


Dump the contents of one mason jar into your VitaMix, or any strong blender.  Add in the frozen mixed berries and chocolate almond milk.  Blend on high until smooth.  Pour back into mason jar with lid to take with you on the go or enjoy right away (:

Green Smoothie Crazy!

For anyone who follows me on Twitter [ @ WeHeartVegan ] or Instagram [ @ WeHeartVegan ], you’ll know that for the past week I have been going green smoothie crazy (:

So here’s the two recipes that I am crazy head-over-heels for this week!!!

Detoxing Green Romaine Smoothie

Serves 2

3/4 cup water

1/4 cup cherry juice (or any type of juice)

1 head romaine lettuce

1 medium cucumber

1 Tbsp. chia seeds

3/4 cup frozen strawberries

1 small frozen banana (use 2 if you’re new to green smoothies)

1 Tbsp. vegan protein powder (this is optional)


Put all in a high powered blender according to the blenders directions. Blend and enjoy!

Green Swiss Chard Heaven

Serves 2

1 cup water

2 large leaves Swiss chard (about 2 packed cups)

1 medium cucumber

3/4 cup frozen strawberries

1 small banana

1 Tbsp. chia seeds

Juice from 1/2 lime

1 Tbsp. vegan protein powder (optional)


Put all in a high powered blender according to the blenders directions. Blend and enjoy!

These may be two servings, but you can easily drink the whole thing yourself!! Divide it between two tight sealing containers (like mason jars), drink one, and bring the other on the go! Drink green smoothies all morning to feel at your best. Trust me.
