Buffalo Tempeh Sandwich

I think I’ve said this before… but I’ve never been so serious in my life: this recipe is a game changer.

Since living on Cape Cod I’ve been eating at place after place that offers vegan food.  Surprisingly, there are more than you’d think (since this is such a fish loving area), but not enough.  One of my favorites is Green Lotus Cafe in Hyannis.  This cafe is completely vegetarian and also offers vegan swaps for every single ingredient!  YAY!!  The only problem is that Hyannis is a couple towns away and I don’t always feel like sitting in traffic to get there ):

My favorite sandwich from Green Lotus is the buffalo tempeh hands down!  The bread is soft and saturated with buffalo sauce, the lettuce and tomato are fresh, and the vegan blue cheese dressing brings it all together!  So what am I supposed to do since I am about to move even deeper into the cape and therefore further from my fav?!  Create my own!!! (:

Buffalo Tempeh Sandwich

Serves 4

1 package tempeh, crumbled

1/2 cup hot sauce

1/2 cup water

2 tablespoons sriracha sauce

2 teaspoons minced garlic

1 tablespoon apple cider vinegar

Pinch sea salt

Pinch fresh ground black pepper

Pinch fresh ground red pepper flakes (The Spice Hunter brand Fiery Chile Fusion)

Vegan blue cheese

Soft whole grain sandwich bread

Veggies like lettuce, tomato, and onion

Directions:

In a medium mixing bowl, combine hot sauce, water, sriracha, garlic, apple cider vinegar, salt, pepper, and red pepper flakes.  Mix well until smooth.  Crumble in the tempeh, stir well, then set aside in the refrigerator for a couple hours.

Once marinated, prepare your sandwich.  Use any and all the veggies you want, but my personal favorite on sandwiches like this are simple: lettuce, tomato, and onion!  Spread the blue cheese spread on one half of the bread and the tempeh mixture on the other, sandwich together and prepare yourself for the messiest, yummiest sandwich ever!  Share and enjoy (:

    How nice to know Cape Cod is vegan friendly. My daughter lives in Concord, MA but has family in Sandwich. I’ll let her know that Cape Cod is becoming vegan friendler–it’s a blessing to learn this!
