This month for Secret Recipe Club I was assigned Cook with Sara, a lovely blog written by, of course, Sara! She does a great job writing out her recipes and providing plenty of wonderful pictures! I had he hard choice of either a veganized version of tuna melts, a veganized version of easy crab cakes, or sweet potato fries!
Sweet Potato Fries
2 medium sweet potatoes, peeled and cut into think french fry sized pieces
2-4 Tbsp. olive oil
Fresh ground black pepper
Preheat the oven to 375 degrees Fahrenheit. Cover the sweet potato fries in the oil and spices either in a bowl or in a large plastic zip top bag.
Spread evenly onto a baking sheet and bake for 25-30 minutes, flip, and bake 25-30 minutes more until slightly browned. Enjoy (:
