Slop, Sloppy Joes

A couple nights ago Derek invited a poker friend of his and his girlfriend over for dinner at our place.  This friend helped us out by looking at an apartment here in Las Vegas before we could get there, so we owed them one!  Is there any better pay back than cooked food?!  I don’t think so (:

These particular friends are both vegetarian!  Hollah!!!  Derek is so outnumbered haha!  But he doesn’t mind… as he tells everyone “it’s great having a vegan girlfriend cuz I can take bites of all her food and she can’t have any of mine.”  He’s the best <3

I didn’t want to make anything too crazy, but I wanted something delicious, healthy, and filling.  I recalled once when Julie and I made PPK Snobby Joes at our friends house and I also recalled it being so good I had two huge portions… whoops!  So “Snobby Joes” and tater tots it is!


Sloppy Joes

Serves 4-6

1 cup uncooked lentils

4 cups water

2 Tbsp. olive oil

1 medium yellow onion, diced small

1 medium green bell pepper, diced small

3 cloves garlic, minced

3 Tbsp. chili powder

2 tsp. oregano

1 tsp. sea salt

3/4 cup tomato sauce

1/4 cup tomato paste

3 Tbsp. pure maple syrup

1 Tbsp. yellow mustard

4-6 hamburger buns


In a medium saucepan, cook the 1 cup lentils in the 4 cups water (simmering) for about 20 minutes, or until tender.


Meanwhile, in a large pot, sauté the onion and green bell pepper in 2 tablespoons of olive oil.  Once softened, add the garlic, chili powder, oregano, sea salt, tomato sauce, tomato paste, and the cooked lentils.  Stir well, cover, and let cook over medium heat for 10-15 minutes.

Add the remaining ingredients, stir well, turn the heat as low as it can go, cover, and let meld for another 10-15 minutes (if you can wait that long).



Serve on a soft sesame seed burger bun and enjoy! (:

    I would never have thought to make sloppy joes with lentils. What a fantastic vegetarian idea.
