Secret Recipe Club April!

This month for Secret Recipe Club I was assigned Aimee’s blog From Chapel Hill to Chickenville. Aimee is one busy and amazing lady! With so many recipes to choose from, I finally chose to reproduce her recipe for Homemade Instant Oatmeal.

Cinnamon Brown Sugar Instant Oatmeal

Yields about 1 1/2 cups instant oatmeal

1 cup + 1/4 cup old fashioned oats, divided
1/2 tsp. ground cinnamon
1 Tbsp. packed dark brown sugar
1/4 cup walnuts
1/8 tsp. sea salt
1 Tbsp. chia seeds, ground in a coffee grinder

Directions:

In a food processor, combine all the ingredients except for the 1/4 cup oats. Pulse 4 to 6 times until the oats are small and all the ingredients are combined. Transfer to a small mixing bowl and stir in the 1/4 cup whole oats.

Divide the oats into 3 snack size bags (about 1/2 cup in each bag).

To make the instant oatmeal: add hot water, stir well, and enjoy a great bowl of oatmeal anywhere you are! And use your imagination here: add some dried fruit like raisins, dried apple or cranberries, different spices, coconut flakes, and/or more whole nuts.

    Thanks girls! I’m so glad you found something to convert to vegan. So all you had to do was remove the milk powder – right? I love the addition of walnuts – yum!

      Took out the milk powder and added in some ground chia! Worked out perfectly! I was debating between making this recipe or the cookie dough truffles… mmm!!! I like my choice, and my waistline does too LOL!!! <3

    Chia seeds are the new black. I love oatmeal…this would be perfect for a take along breakfast for work!

      Agreed! I think it would be great for a number of things: bringing to work, bringing on the plane, or even bringing on a hike. As long as you have access to hot water, you’re good to go!! (:

      Thanks Erin! I also love how healthy the recipe is… and it’s versatile so you can change the flavors to your preferences!! Great food for a dark and rainy New England day like today!

    Great idea, I’m always running out of the house without eating. My daughter would like this too!

      Definitely great for kids. The packs are so light-weight and great to throw in your purse. You could toss in some more kid friendly ingredients like chocolate chips and a little cocoa powder or dried strawberries!! Mmm!!

      That’s exactly why I wanted to make it! No junk like in commercially processed instant oatmeal packs!

      I added the chia seeds as a thickener and it worked perfectly! And the chia seeds add some protein and omegas! Yay!

      Very true! I was thinking this morning that I want to make a bunch and put it back into the oatmeal container. That way I can just shake it up and use a scoop to portion in the morning! Yay quick oats (:

    Dontcha’ love Aimee!!!!!!! You got a great blog to explore. I love this idea and am stealing it! This would be great to take and store work aso I can have a heatlhy breafkast when I am running late. (That would mean I might have to share it though.)
