Blueberry Pancakes for Two!

So this morning I woke up after sleeping in slightly and had a great day filled with no plans ahead of me!  I love that!!  I relaxed, read, and cooked pancakes! (:

These pancakes originally came from one of my favorite sites  Is it weird to say you love someone you’ve never met?  I hope not because I love Gena…  I want to thank her not only for this amazing pancake recipe, but also for introducing me to Banana Soft Serve many moons ago.  This has literally become a staple of mine.

Blueberry Buckwheat Pancakes

Serves 2

2/3 cup buckwheat flour

2 tsp. baking powder

Pinch sea salt

1 tsp. cinnamon

1 Tbsp. flax meal mixed with 1 1/2 Tbsp. water (flax egg)

1/2 tsp. vanilla

1 Tbsp. brown rice syrup (or any liquid sweetener you choose)

2 tsp. coconut oil

3/4 cup non-dairy milk (I used unsweetened original almond milk)

Heaping 1/4 cup blueberries, fresh is the best… but hey it’s November, so I used frozen; either will do!


Prepare the flax egg and set aside.

Whisk together the dry ingredients: flour, baking powder, salt, and cinnamon.

In a small saucepan over low, heat the frozen blueberries (omit this step if you’re using fresh).  Once thawed pour off the excess liquid and return to the heat.  Add the coconut oil and heat until melted.

Add in the brown rice syrup, vanilla, milk and flax egg; stir well to combine.

Make a well in the center of the dry ingredients and gently pour in the blueberry mixture.  Stir with a wooden spoon until just combined.  It’s ok if a few lumps remain.

Using a 1/4-cup measure, portion the batter onto a heated and lightly oiled non-stick skillet.

Cook for a few minutes on each side, or until lightly browned and cooked through.

Drizzle with pure maple syrup or my High Protein Maple Syrup Alternative (see below) and enjoy!

High Protein Maple Syrup Alternative

Serves 2

1 extremely ripe banana (yup… the brown one you’ve neglected on your counter)

1/4 tsp. cinnamon

1 Tbsp. raw coconut nectar (or any liquid sweetener of your choosing)

1 serving (4 Tbsp.) Manitoba Harvest vanilla hemp protein powder

1/4 tsp. maca (optional)


Mash the banana with a fork and combine in a small bowl with the rest of the ingredients.  Stir well until no lumps remain.

Spread over the hot pancakes or eat it by the spoon.  Mmm…
