Day 6!

27 Aug

I woke up this morning with a stuffed nose and sick feeling all over!!  BLAH!  I felt this coming on the other night and then in to the night as I tossed and turned and could not fall deeply asleep!!!!  It’s okay though, I’m going to power through!

This mornings juice was a tad different than it has been:

5 leaves kale

4 celery stalks

2 cucumbers

2 broccoli stems

2 apples

1 pear

I loved it!!  So light and refreshing!  Definitely a little “greener” than it has been, but in a good way.

After juice, I went to the farmer’s market downtown.  We needed more fruits and vegetables for the daily juice, but the selection was not as great as I hoped.  Did you all know that some organic pesticides are made from fish?!  Does that mean that not all of our vegetables are vegan??  Scary.

Ended up with an Asian cucumber (which is a cucumber that is 2 cukes in one), 2 regular cucumbers, a sweet potato plus a giant bunch of scallions!  We were hoping for organic apples, but alas there were none!  I’ll just have to pick some up from Whole Foods!  Does anyone else think that farm prices are going up?  Maybe it’s just me.

For lunch (1:00 p.m.) I had some raw sushi!!  This was a highlight!

Raw Garden Sushi

Serves 2-4

2 cups cauliflower rice (cauliflower florets pulsed in a food processor)

1 avocado, sliced thin

1 large carrot, sliced thin

4 sheets raw, untoasted nori

1 garlic clove

4 tsp. tahini

1/2 Tbsp. mellow white miso

1/2 tsp. kelp flakes with cayenne

1 Tbsp. organic wheat free nama shoyu

1/4 tsp. mustard powder

1/4 tsp. onion powder

2-3 Tbsp. water

Black pepper, to taste

In a food processor, combine the garlic, tahini, miso, kelp, shoyu, spices and water.  Pulse until smooth.  Taste and season accordingly.

In a mixing bowl add the cauliflower “rice” and the sauce.  Stir to combine.

Using a sushi mat, roll your sushi just like it were made with cooked rice.  Click here for step by step directions.

This was an amazing meal!!  The flavor was so bold and wonderful.  Being sick I definitely was craving some flavorful food so this worked out well.  This sushi was also extremely filling.  So filling I kind of didn’t have any dinner… ):

My dinner, which occurred around 8:00 p.m., was actually a raw revolution chocolate coconut bar.  These are 90% raw and 100% delicious!  It filled me up for the remainder of the night.  I had a bar last night for dinner as well while I sober bar hopped and clubbed, it powered me through until 1:30 a.m.!!  Oh the things we gladly do for the newly engaged haha!!

I hope I wake up tomorrow to find my sickness gone!!  Not being sick would be a great way to celebrate one week being done!

Broccoli Stems in a juice? I never would have thought of that.

Sushi looks terrific. I’ll need to try that.
