Breakfast Scramble

So this morning I was really craving some hearty protein.  Luckily the temperature was more tolerable than it has been, without the horrific humidity, so I cranked up the stove top and scrambled up some tofu!

Tofu and Sausage Scramble

Serves 1-2 (depending on appetite)

3/4 cup tofu, crumbled

1 Field Roast sausage link, smoked apple sage, crumbled

1 medium green pepper, chopped

1 heaping cup of kale, cut small

1/2 Tbsp. hemp oil

Salt and pepper to taste

Optional: WayFare Hickory-Smoked Cheddar Style Cheese or nutritional yeast

Directions:

Heat the hemp oil in a medium skillet over medium-high heat.  Add the green pepper and cook for a couple minutes; add the kale and sausage and cook until the kale is softened and the sausage is somewhat browned.  Crumble in the tofu, sprinkle with salt and pepper and cook another minute or so until warmed through.  Add the cheese or yeast, if using.
