Do I even need to type up an introduction for this?! I think the title says it all. And I think the title gets ya hooked!! So let me just give up this amazing recipe and get on with it!!
Cinnamon-Sugar Stuffed Muffins
Makes 12 muffins
1 cup whole wheat flour
3/4 cup whole pastry flour
1/4 cup brown rice flour
1 1/2 tsp. baking soda
1/2 tsp. salt
2 tsp. cinnamon
1/2 cup sugar
1 cup water
1 tsp. vanilla (optional)
1/3 cup safflower oil
1 Tbsp. apple cider vinegar
12 Tbsp. blueberry cream cheese
2 Tbsp. sugar
1-2 tsp. cinnamon
In a large mixing bowl, combine the flours, baking soda, salt, cinnamon and sugar with a whisk. In a medium separate bowl, combine the water, vanilla, oil, and apple cider vinegar.
Combine the wet ingredients into the dry and mix with a wooden spoon until just combined. Pour 1-2 Tbsp. of the batter in to oiled cupcake tins. Spoon 1 Tbsp. of the blueberry cream cheese on top each muffin.
Evenly distribute the rest of the batter over the cream cheese filling.
Bake in a preheated 350 degree oven for 15-17 minutes, or until a toothpick inserted comes out clean. Let cool 5 minutes before removing from the tins and placing on a cooling rack.
Sprinkle each with a heaping tsp. of the cinnamon-sugar topping.
