Oh my… this recipe is going to be used and used and over-used from this day on. So simple and delicious. This is a great recipe if you want/need to bring something to a party! No one will know it is vegan!!
The recipe originally came from PPK’s Banana Bread recipe, but I mixed it up a bit with ingredients I had on hand, like my four cartons of organic strawberries… ($1.99 on sale at Whole Foods! Brace yourselves for tons of strawberry recipes to come.).
1/3 cup brown sugar
1/4 cup vegan granulated sugar
1/4 cup Earth Balance butter, at room temperature
1/4 cup unsweetened apple sauce, with cinnamon
2 ripe bananas
1 cup chopped strawberries (about 8-9 strawberries)
2 cups spelt flour
1/2 tsp. baking soda
1/4 cup unsweetened original almond milk
1 tsp. apple cider vinegar
2 tsp. flax meal
1 tsp. vanilla
1 tsp. pumpkin pie spice (EEK I’M ALL OUT OF CINNAMON)
1/2 tsp. salt
Preheat the oven to 350 degrees. Oil an 8X4 loaf pan and set aside.
Sift the flour, baking soda, salt and spice together into a large mixing bowl.
In a small bowl, combine the milk, vinegar and flax meal. Stir and let sit at least 10 minutes.
In a separate medium mixing bowl, cream together the sugars, Earth Balance and apple sauce.
In yet another separate mixing bowl, mash the strawberries and bananas using either a fork, potato masher or emersion blender. I used the emersion blender because I don’t own a potato masher and I love using the emersion blender! Next time though I will blend these a little less so that there will be some strawberry and banana chunks throughout the bread.
Add the milk mixture, vanilla and mashed strawberry/banana mixture to the creamed sugar; combine completely.
Add the wet ingredients to the dry and stir gently to combine. I counted my stirs and I did about 20. You do not want to over mix the spelt flour because the final bread will be tough!
Pour the batter into the prepared loaf pan and bake for an hour until a toothpick inserted comes out clean! This hour becomes really hard around the 45 minute mark when the smell fills your entire apartment/kitchen and your mouth begins to water. Resist opening that oven door!!
Let cool about 5-10 minutes and then ENJOY! The final result will be moist and doughy (if you want it a little drier cook it for a little longer).
