Pasta with Simple Tomato Basil Sauce

I love when Ryan cooks (:

This recipe is from the the cooking channel‘s show Extra Virgin (don’t you just love Debi Mazar?!).  The sauce seemed so simple, yet so flavorful that we had to give it a try!  Ryan was good enough to give it a go while I was staying late at work… dinner on the table when I arrived <3

Simple Tomato Basil Sauce

Yields enough for 4 servings (more or less depending)

1 medium onion

5 large cloves garlic, minced

16 oz. stewed tomatoes

2 cups fresh basil

Salt and pepper to taste

2 Tbsp. olive oil

Directions:

Pour the stewed tomatoes into a large bowl and, using an immersion blender, puree until the tomatoes are all broken up.

Meanwhile, heat the olive oil in a skillet over medium-high heat.  Add the onion and cook until translucent and aromatic; add the tomatoes and garlic and turn down the heat to medium-low.  Cover and let simmer for 20-30 minutes.

In a large pot, bring the pasta water to a boil and pour in paste; cook to al dente.  Add the drained pasta to the sauce with the basil and stir to combine in the saucepan.  Let the al dente pasta finish cooking in the sauce, about 5 more minutes.

Plate the pasta and sauce and garnish with some fresh basil.

Enjoy with a nice salad and some garlic bread or toasts (:
