End of the Week Detox Carrot Cake

What better way to end the week but with delicious raw-vegan-sugar-free carrot cake!! What?!  No way can that taste good?  Wrong-oh!!

I must say, even I had my doubts…but one smell of this raw cashew pineapple frosting and I knew not to fear!

Detoxifying Carrot Cake

Serves 12-13

For the carrot cake:

4 cups shredded carrot, unpeeled

1 cup dried dates, soaked at least 20 minutes

1 cup raw walnuts, soaked at least 20 minutes

3/4 cup dried apricots, soaked at least 20 minutes

1 cup raisins, soaked at least 20 minutes

1 cup shredded unsweetened coconut

1 tsp. cinnamon

1/2 tsp. nutmeg

1/2 tsp. allspice

1/4 tsp. Himalayan sea salt

For the frosting:

1 1/4 cup raw cashews, soaked for at least 30 minutes

1/2 lemon, juiced

3 fresh dates, pitted

1 tsp. vanilla

1/2 cup cubed pineapple

1/2 tsp. cinnamon

about 3 Tbsp. non-dairy milk, more or less depending on preference and need


In a bowl, combine the dates, apricots, raisins and walnuts and soak together for at least 30 minutes.

In a separate bowl, shred in the carrots.

In a food processor, either all at once or in batches depending on the size of your processor bowl, combine the nuts and fruit and blend until pureed and combined yet still chunky.  Add in the carrots and the salt and spices and pulse a few times until completely incorporated.  Fold in the coconut.

Place 12 cupcake liners into a cupcake pan; fill each cupcake liner full (there was enough leftover for one more cupcake).  Set aside and prepare the frosting.

To prepare the frosting: Put all ingredients into a Vita-mix blender, or a food processor, and run until combined and smooth, adding more liquid when necessary.

Top each cake with a heaping dollop of frosting and voila!  Enjoy your dessert guilt-free! (:

These kind of remind me of the amazing Lara bar, not too sweet yet very satisfying as a dessert.  I’m thinking of having one tomorrow morning for breakfast!!  I can finally justify having dessert for breakfast: these are healthy, raw, sugar-free, and chock full of fiber and protein!  Smile!

Oops… accidentally flipped one frosting side down… party foul!!!

      Only non-simple part… I had to grate all the carrots by hand!!! So hopefully you have a large food processor with a shredding attachment if you’re going to try this out!! (:
