Have you ever wanted your chocolate, vegetable, fruit and protein fix all in one? Then this smoothie is probably for you. It’s filled with kale and spinach, along with a scoop of chocolate Amazing Meal for extra protein, antioxidants and vitamins. There’s also a drizzle of melty, rich-in-fats coconut butter on top for extra filling power. When the coconut butter hardens, it turns into a “stick frosting” texture. Definitely one of the healthiest smoothies I’ve ever made! AND it’s delicious and filled with chocolatey goodness.
Also: did you know raw coconut butter is rich in manganese, dietary fiber and essential amino acids?
Choco-Blube-Greens Smoothie with Coconut Butter “Stick Frosting”
1 cup original flavored almond milk
1 handful of organic spinach
Organic kale from 1 leaf, chopped
1 scoop or 1 packet of Chocolate Infusion Amazing Meal
1/2 cup of Trader Joe’s Very Cherry frozen mixed fruit (or any cherry/blueberry frozen fruit mix)
Handful of ice
1/2 a frozen banana
1 tsp raw coconut butter for topping (I used Artisana brand, which you can purchase at Whole Foods)
Granola for topping
Directions: Add all ingredients, except the ice, into a blender in the order given. Blend on high until smooth and combined. Slowly add ice until you get a thick, slush-like texture. Pour in a glass. Microwave the coconut butter for about 15 seconds and drizzle it on top of the smoothie and wait a little for it to harden into “stick frosting”. Add granola if you want, and enjoy all of the nutrients, healthy fats and protein! It’ll keep you buzzing along for hours.
