Vegan Martha Stewart Show!!

Julie and I just got back home from New York City!  WE’RE TIRED!  It was such an amazing day for weather we couldn’t have asked for anything better!  We woke up at 6 a.m. and got dolled up and ready for the Martha Stewart Show!  It was so much fun!

Biz Stone (cofounder of Twitter was there; p.s. you can follow us @weheartvegan) was on and he made seitan bourguignon which smelled and looked fantastic!  We can’t wait to try this out.  Then, between their funny bantering, they also made a parsley-leaf salad with orange zest and pine nuts!   Since I’m not a huge fan of parsley, this did not appeal to me as much.  I think I would love to try it with arugula instead of the parsley!

After Biz, Kathy Freston <3 came on!  She is so informative and brilliant!  Martha and Kathy made Vegan Snack Bars and, like the bourguignon, this made our mouths water like crazy!  All the ingredients were amazing!!  Can’t wait to try this out (with brown rice syrup).  GIVEAWAY!  We got to take home a copy of Veganist by Kathy!!!  YAY!!

Then the amazing Gene Baur, the new love of my life, came on to talk about Farm Sanctuary!  He is a saint in the eyes of farm animals (and humans of course).  What Farm Sanctuary did, and is still doing, for all these animals lives is just amazing!  We definitely want to plan a trip to visit there!  Then he talked about his new book Farm Sanctuary: changing hearts and minds about animals and food… and then he gave a copy to everyone in the audience!  I felt like a kid getting free range in a vegan candy store – – ECSTATIC!!

I didn’t want the show to end!  It was an amazing experience for us to see a show taped live… I would love to attend another!

After the show we had a few hours to hang in the city and soak in the sun.  We did a lot of walking… and when I say a lot, I mean A LOT!  We probably walked about 6 miles in the day.  It was a perfect walking day too.  The sun was shining and there was a nice warm and cool air throughout.  We walked to central park (and then all throughout central park), Whole Foods Market (which scared us) and then walked around Times Square.  It was so much exercise and fun and now my legs are crying for bed!!

I can’t wait to read these books and cook some new food!!  We love being vegan; when you’re vegan you wake up everyday with a sense of clarity and you know that the decisions you are making are the best you could make.  What else could you ask for?


Vegan Enchiladas!!

The other night we moved south of the border for some delicious enchiladas and brown rice with sauteed peppers and onions!!  Usually when we eat mexican food we have burritos or tacos so it was definitely a treat to make something I’ve never made before.  It was super simple too!!

Vegetable and Bean Enchiladas

Serves 4-6

1/2 Tbsp. olive oil

1 large red onion, chopped

1 small yellow onion, chopped

1 medium red pepper, chopped

1 medium yellow pepper, chopped

1 medium orange pepper, chopped

1 (4 oz.) can fire roasted, diced green chiles

1 1/2 (24 oz.) cans refried black beans

1 small green cabbage, sliced thin

1/4 tsp. chilli powder

1/4 tsp. cumin

1/4 tsp. cayenne pepper

1/4 tsp. paprika

1 Tbsp. nutritional yeast

7-8 tortillas (whole wheat or flour)

1 (12 oz.) jar enchilada sauce

1 1/2 cups brown rice

3 cups water

1 Tbsp. olive oil

Fresh cilantro for garnish


Cook the rice in 3 cups of water with 1 Tbsp. olive oil; either in a rice cooker or a large pot.

Meanwhile, saute the peppers and onions in a large pan with 1/2 Tbsp. olive oil.  Once soft, add the cabbage, green chiles, spices and yeast.  Cook for a few minutes longer until all the vegetables are soft.  Set about 1/3 of the vegetables aside ot be incorporated into the rice.

Now set up an enchilada station!!

Spread on some refried beans, put on some vegetables, then roll up into a tight taco.  Place them all into a casserole dish.

Pour on the entire jar of enchilada sauce evenly.

Bake, covered with foil, in a preheated 425 F oven for 30-35 minutes.  Remove from the oven and let sit for about 5 minutes uncovered.

Once the rice is cooked, add to the portion of vegetables that was set aside.

Top the enchiladas with cilantro and serve alongside avocado and vegetable rice.  So delicious!!!


Portland Trip, part deux!

I love Portland!  I guess I should say: I love city life with a small town feel!  I think that’s also why I love San Francisco!!  You have the benefits of a city, like tons of stores and restaurants, but you don’t have all the hustling and bustling of a large city like New York City!

Sunday morning was really funny.  We couldn’t stay in Portland too long because I had to work, but we assumed before noon there should be some great breakfast or brunch places open.  Fail.  We wanted Thai (yes we like to eat Thai for breakfast…) but we couldn’t find one open.  We wanted coffee, but like 10 places we walked by were closed!  Then we went in to Little Lads vegan bakery, but the guy running the store looked like he just got out of bed and all there was was herbal corn (which of course I bought some) and herbal tea.  Hmm…

Finally we found a coffee shop open and Ryan got his OJ and we split an everything bagel with peanut butter (this was the pre-breakfast breakfast (: ).  Then, as we wandered through the quiet streets, we found a coop called Local Sprouts.  Inside there we discovered it was an adorable cafe with Bomb Diggity Bakery, live music and a menu serving breakfast, brunch, lunch and dinner.


The menu was great and the feel of the cafe was comfortable!  I felt like I was walking in to a small town farm kitchen with a ton of friends.  Cheeeesy!  Seriously though, I need to go back!  I had vegan buckwheat pancakes with Earth Balance Butter and maple syrup with a side of home-fries and hot sauce.  The only not great thing was it took a very long-time to get our food, but it was extremely busy!

Then we bought Julie a homemade vegan granola bar from Bomb Diggity Bakery!!

Now while we may have had our minds set on Thai (or Green Elephant), we were very satisfied with this cafe we accidentally stumbled upon!!  Especially since my sister and Jarod gave me a gift certificate to a Asian-Thai food restaurant called The Rice Barn.  Can’t wait to go there again!
