Okay so no… we didn’t really have Italian grinders, but we did have the most amazing sandwiches. And seriously I mean this when I say it was THE MOST AHMAZING SANDWICH I’ve had in a really, really long time!
Hummus and Basil Grinder
1/2 French baguette, divided and sliced horizontally
1/2 cup original hummus tahini, divided
3-4 cups spinach
1/4 cup basil, chiffonade cut
1/2 small white onion, slivered thin
1/4 cup roasted red pepper strips, divided
1/4 cup Ryan’s herbed oil and vinegar dressing
Spread 1/4 cup hummus on to each baguette half.
In a small bowl add the spinach, basil and onion and toss to coat with the herbed dressing. With the sandwiches lying open-faced, place the dressed spinach onto the bread. Top with roasted red peppers and close the sandwich.
