Snow Day Smoothie

We woke up this morning to a lovely un-plowed parking lot and strong winds blowing snow each which way… deeeeelightful!  Since I had some time to kill before work, I thought I should make an ice cold smoothie!

Coconut Snow Day Smoothie

Serves 2

1 cup unsweetened almond milk

1/4 cup frozen banana

2 Tbsp. coconut butter

1/2 cup frozen blueberries

1/4 cup frozen pineapple

1/2 cup frozen spinach

1/2 cup chopped carrot

1/2 scoop of Green Vibrance powder

1/2 cup ice cubes


Place in your Vita-mix, or your strongest blender, according to manufacturers directions; blend for 1-2 minutes until smooth, adding a tablespoon more of almond milk if needed.  Enjoy!!

This greens powder is very healthy for you, but the taste is hard to stomach.  It is a very “green” taste that can barely be masked by the sweet fruits added!  You do get used to the flavor though.
