Breakfast is definitely the most important meal of the day!! It’s great to start the day off right with some whole grains, fruit and nuts for long sustaining energy!
Twice Cooked Cinnamon Raisin Oatmeal
1/3 cup old-fashioned oats
1 cup water
2 Tbsp. chopped pecans
2 Tbsp. raisins
1 tsp. cinnamon
1 tsp. brown sugar
2 Tbsp. unsweetened vanilla almond milk
1 Tbsp. hemp seed
Put the water and oats into a small saucepan and bring to a boil. Remove from the heat and put on a cover; let sit for 15 minutes (nows the time to finish waking up: brush your teeth, make your bed…). The oatmeal will still be very wet even after the 15 minutes when the other ingredients are added. Cooking it for the second time will thicken the oats and all the liquids will be absorbed.
Return back to the heat and add the pecans, raisins, cinnamon, and sugar. Heat and combine all the ingredients for about 5 minutes more, pour into a bowl and top with the almond milk and hemp seeds.
