Kale Stir Fry

For the new year I am trying to eat all the food groups, in other words, eat a well-rounded plate of food for every meal.  The holidays have left me feeling so bogged down by all the Earth Balance butter laden treats!!  I want to kick my butt in gear and record what I eat to check in on my diet more carefully.

Tonight for dinner we had a kale stir fry over short grain brown rice.  One serving of vegetables, check, two servings of grains, check, one serving fats, check.

Kale Stir Fry

serves 3

1 medium yellow onion, chopped

3 celery stalks, chopped

3 carrots, chopped

4 garlic cloves, chopped

1 1/2 tsp. olive oil

1/2 tsp. peanut oil

1 bunch lacinato kale, stems removed, leaves torn

1/2 cup soy sauce

1 tsp. paprika

1/4 tsp. liquid smoke

1 tsp. brown sugar

3 Tbsp. peanuts, chopped

Salt and pepper to taste

2 cups short grain brown rice


Heat the oil in a large saute pan; add the onion, garlic and carrots and cook about 5 minutes, then add the celery and continue cooking for about a minute longer.

Add the soy sauce, liquid smoke, paprika, salt and pepper, brown sugar, and kale and cook until the kale is wilted and the sauce is spread throughout.  Add in the chopped peanuts and mix.

Either top the brown rice with the saute mix or combine it all together in the pan, it’s up to you.

    Haven’t tried this one but will be sure too. Kale the super food looks delicious!!
